I always crave for Adobo...it's so delicious! Adobo is the National Dish of the Philippines. It consists of chicken cooked in garlic, soy sauce, and vinegar which is then seared. The process is simple, and the taste is to die for! It is one of the major food that identifies the Filipino culture, and a very easy dish to prepare. You have to try it!
Ingredients
- 2 lbs chicken, cut into serving pieces
- 6 eggs
- 3 pcs dried bay leaves
- 4 tbsp soy sauce
- 4 tbsp vinegar
- 3 cloves garlic, minced
- 2 cups water
- 1/4 cup cooking oil
- salt and pepper
Cooking Procedure
- In a large container, combine the soy sauce and garlic then marinade the chicken overnight
- Place the cooking oil in a pan and apply heat
- When the oil is hot enough, put-in the marinated chicken
- Add water and bring to a boil
- Add the dried bay leaves and simmer for 30 minutes or until the chicken is tender
- In another pot, boil eggs for 10-12 minutes, let it cool and peel the shell
- Add hard boiled eggs with the chicken Adobo
- Add vinegar, salt, and pepper and simmer for 10 to 12 minutes
